Homemade Pasta Dough
If you're like me and love to make the basics yourself. Then look no further for the PERFECT pasta dough recipe. It took me a few tries, but this egg to flour ratio works perfectly for pasta dough. When it comes to flour, I use a mix of semolina and 00 tipo flour. You can find both at your local grocer or online via Thrive Market or Amazon.

Ingredients
5 egg yolks
2 eggs
1 tsp salt
Directions:
Mix dry ingredients and pour onto a flat surface. Create a hollow center (like a volcano) where you will put your eggs and yolks + salt. You are going to mix the eggs in the middle of the flour like a bowl and slowly start to push more flour into the egg mixture.
Once the flour and egg mixture is fully blended you will want to work the dough until it's soft and elastic.
Form the dough into a ball with your hands, wrap tightly in plastic wrap and let the dough rest at room temperature for 30 minutes. Use immediately or refrigerate for up to 1 day.
When you are ready to roll out your dough, you can do it by hand or by using the pasta attachment of your KitchenAid stand mixer. (EXAMPLE from KitchenAid's Youtube)
Lightly toss your pasta in flour after formed.
When it's ready to cook, add to heavily salted water for 3-5 minutes for al dente pasta.
Toss in your favorite sauce and serve!
