Creamy Tomato Tortellini Soup
I am OBSESSED with this soup! This was one of those recipes I made in my early 20s because it was quick, easy, AND cheap! When it comes to putting this soup together there are a few ingredients that you can swap out. First of all, the Beyond Beef is optional but HIGHLY encouraged. Also, I typically grab the frozen tortellini option that is cheaper but you can also get the fresh tortellini in the refrigerated section.
And I don't know about y'all but dipping a nice cheesy piece of garlic bread in a creamy-herby-goodness is what life is all about!

Ingredients
1 medium red onion
6-8 cloves of garlic
Small bag spinach
1 package Beyond Beef (or any plant based ground beef)
1 cup fresh basil
28 oz crushed tomatoes
16 oz tomato sauce
8 oz tomato paste
32 oz vegetable broth
16 oz heavy cream
1 tbsp: dried basil, garlic powder, onion powder, crushed red pepper (if you like it spicy🔥)
2 bay leaves
1 Package Cheese tortellini OR spinach tortellini (for those keeping it vegan )
Shaved Parmesan
Grated Parmesan (mix this with the cream for a cheesier base, but not necessary)
4 tbsp butter
Directions
Using a large/tall pot add your butter to a pan at medium heat.
Add chopped red onion to butter and let it cook for about 5 mins. Add chopped garlic for an additional 3 minutes at medium high heat.
Add in spices, seasonings, and bay leaves. Then add in crushed tomatoes, tomato sauce, tomato paste, and vegetable broth, and bring to a boil.
Once this is at a boil bring back to medium heat and add your heavy cream and stir, then slowly add in grated parmesan.
After you have mixed in the cream and cheese, add in your spinach. Put a lid on this to let the spinach steam and break down. It may seem like a lot of spinach but once it cooks it will be a fraction of the size.
Add in your desired amount of tortellini and follow cooking instructions for al dente pasta.
Lastly, add in 3/4 cup fresh basil and save the last 1/4 cup for garnish.
For the best eating experience serve with garlic bread!
