Hot GRILL Summer Spread
In honor of everyone of living their best hot girl summer, I decided to put together a healthy(ish) spread for those of you who want a quick and easy option to make during the week. If you're like me then you're looking for any reason to get outside now that the summer weather is here so you better believe I will be grilling all of my food for the foreseeable future.
This is a pretty typical meal combo in my life - protein, veggie, and you bet your ass some sort of carb makes it to my plate. The grilled chicken recipe has become a staple in my meal prep routine so if you want something you can cook ahead of time then I cannot suggest this enough!
The SPREAD
Bruschetta with Balsamic Glaze
Herby Grilled Chicken
Garlicky Ghee Green Beans
Bruschetta Recipe
Ingredients
French Baguette
~2 cups Cherry Tomatoes
1/4 cup Fresh Basil
1/4 cup Chopped Red Onion
2-3 minced garlic cloves
Shaved Parmesan
1 tbsp dried oregano
Olive Oil
Salt & Pepper to taste
Directions
Slice baguette and brush with olive oil - throw your bread on the grill for nice char marks.
Chop tomatoes, basil, red onion, garlic, and mix in a bowl.
Add in shaved parmesan, oregano, olive oil, and salt & pepper to taste to the vegetables.
Add tomato mixture to grilled bread and top with balsamic glaze ( I buy balsamic glaze from the grocery)
Herby Grilled Chicken
Ingredients
~2lbs boneless chicken breasts - I cut breasts into 2-3 pieces depending on size.
1 tbsp knorr chicken bouillon
1 tbsp dried parsley
1 tsp dried crushed rosemary
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
Salt and Pepper
2 tbsp Avocado oil or any neutral oil
Directions
Prepare and cut chicken then add to a medium bowl.
Add spices, herbs, and oil to the bowl.
Mix and refrigerate for up to an hour to allow it to marinate.
Grill 2-3 minutes on each side.
Garlicky Ghee Green Beans
Ingredients
~1lb green beans
1 tbsp ghee
8 garlic cloves (halved)
1 tsp garlic powder
1 tsp onion powder
1 tsp dried crushed rosemary
1/2 tsp crushed red pepper
Salt & Pepper to taste
Directions
In a bowl add freshly cleaned and snapped green beans.
Add melted ghee and seasonings, and mix to evenly coat the beans.
Add the green beans to a cast iron or any high heat pan.
Cook on the grill for about 20 mins. You'll see the green beans and garlic start to get golden and crispy when they are ready.
