Roasted Red Pepper Hummus

This pandemic turned me into quite the snacker ever since I started working from home full time, the short few steps to my fridge hasn't helped. So welcome to my favorite EASY and HEALTHY dip to keep in the fridge. Whether you're looking to dip it with your favorite crudités or adding it to a bowl or wrap, the flavor of this hummus goes with everything.

Prep Time: 10 Mins

Cook Time: 20 mins

Servings: 8 Servings


Ingredients

  • 2 cans garbanzo beans

  • 1 jar of roasted red peppers

  • 1 cup tahini

  • 2 tbsp minced garlic

  • 1 lemon, juiced

  • 1 tsp cumin

  • 1/2 tsp salt

  • Olive oil

  • 1 cup cold water

  • Sprinkle of smoked paprika for garnish

  • Fresh Parsley for garnish

Directions

  1. Boil your garbanzo beans in water and a pinch of salt for about 20 minutes.

  2. In a food processor, start by blending your tahini and lemon to create a creamy paste.

  3. Add in garbanzo beans, roasted red peppers, cumin, and 2tbsp olive oil.

  4. Slowly add in your water to avoid adding too much. I like to use cold water to help reach the creamy consistency.

  5. Once fully blended, plate the hummus and garnish with olive oil, minced garlic, parsley, and smoked paprika.

  6. Eat with your favorite pita and vegetables!
